    fruitcake mix
  • 600
    g
    glacé fruit cake mix
  • 250
    ml
    glacé cherries, quartered
  • 750
    ml
    brown sugar
  • 15
    ml
    bicarbonate of soda
  • 1
    Litres
    water
  • 375
    ml
    brandy
  • 375
    ml
    butter
  • 3
    eggs, whisked
  • 15
    ml
    baking powder
  • 720
    g
    white bread flour
 

Method

 
Line two 23 cm diameter pans with a double layer of aluminium foil and grease well with butter or margarine. Preheat the oven to 150 °C. Place the fruitcake mix, cherries, brown sugar, bicarbonate of soda, water, brandy, and butter in a saucepan and boil for 25 minutes. Cool. Add the eggs and mix well. Add the baking powder and flour and mix again. Turn the batter into the prepared tins and bake for three hours or until a skewer inserted in the centre comes out clean. Makes two medium cakes.
