Aniseed brandy

  • 70
    g
    aniseed
  • 750
    ml
    brandy
  • 625
    ml
    sugar
  • 750
    ml
    water
 

Method

 
Mix the aniseed and brandy. Leave for about two weeks. Strain the brandy through a muslin cloth and set aside. Place the sugar and water in a saucepan. Heat slowly until all the sugar has dissolved. Bring to the boil and simmer until a fairly thick syrup has formed, about 20 minutes. Cool slightly. Mix the syrup and brandy. Stir and pour into clean, sterilised bottles. (The taste improves with age.) Makes 1,5 litres.
