Angelfish spread

  • 1
    onion, chopped
  • 125
    g
    butter
  • 5
    ml
    black pepper (or to taste)
  • 2
    ml
    nutmeg
  • 500
    g
    smoked angelfish, deboned and flaked
  • 250
    ml
    cream
 

Method

 
In a fairly deep saucepan, stir-fry the onion in the butter until soft.
Season with black pepper and nutmeg.
Add the angelfish and cream.
Bring to the boil then process in a food processor until smooth. Chill.
Serve with toast triangles and pickles such as gherkins, onions and peppadews.
