Angel food cake

    cake flour
  • 250
    g
    castor sugar
  • 250
    ml
    egg white (about 8 egg whites)
  • pinch of salt
  • 5
    ml
    cream of tartar
  • 5
    ml
    vanilla essence
  • Frosting
  • 60
    g
    dark chocolate
  • 300
    g
    sugar
  • 125
    ml
    milk
  • 60
    g
    butter
  • 15
    ml
    golden syrup
  • 6
    small chocolate eggs to decorate
 

Method

60 minutes
 
Sift the flour and 50 ml sugar together.
Beat the egg whites in a glass bowl until frothy.
Add the salt and cream of tartar and beat until shiny and stiff, but not dry.
Fold in the remaining sugar, 15 ml at a time. Fold in the vanilla essence.
Sift the flour and sugar mixture in thin layers over the egg white, folding it in lightly.
Spoon the mixture into an ungreased 26 cm tube pan and bake in a preheated 160 °C oven for one hour. Allow to cool in tin for one hour.
Loosen the edges with a blunt knife and remove from the pan.
To make the frosting, heat all the ingredients together in a heavy-based saucepan.
Bring to the boil and boil for one minute, stirring continuously. Set aside until cold.
Beat with an electric beater for five minutes until smooth and thick.
Spoon over the cake and decorate with chocolate eggs.
