Ingredients (5)

120.00 g flour — cake
250.00 g castor sugar
8.00 eggs — large, whites only
salt — pinch
5.00 ml Cream of tartar

Method:

Sift flour and 50 ml of the sugar together.
Beat the egg whites in a large bowl until foamy. Add salt and cream of tartar and beat until stiff and shiny, but not dry. Fold in the remaining sugar, a spoonful at a time.
Sift in the flour and sugar mixture in layers, folding in each layer gently.
Pour mixture into an ungreased 24 cm diameter tube pan and bake in preheated 180 °C oven for 40-45 minutes or until golden. Allow to cool completely before removing from the pan.
Drizzle with a glacé; icing or melted chocolate.
Makes 1 x 24 cm ring cake.
