Ingredients (10)

100.00 g anchovy fillets
2.00 garlic — cloves
30.00 ml fresh chillies — 573
110.00 g butter — soft
5.00 ml vinegar — wine
5.00 ml brandy
2.00 ml lemon juice
0.00 black pepper — freshly ground
1.00 bread — French loaf
0.00 fresh parsley — finely chopped

Method:

Switch on the oven grill.
Drain the fillets and mash well with the garlic.
Add the oil, stirring continuously.
Add the butter and mix well.
Add the wine vinegar, brandy and lemon juice and season well with black pepper.
Cut 8-10 slices of French loaf (1,5 cm thick).
Toast the bread on one side until golden brown.
Spread a little of the anchovy mixture on the untoasted side of each slice so that it is absorbed by the bread.
Set the oven at 200 ºC (400 ºF) and bake until the spread has melted into the bread.
Sprinkle with a little finely chopped parsley and serve immediately.
