Anchovy and avo tapas

  • big fresh anchovy fillets, the juicy fresh deli kind
  • avo, sliced in quarters and then into 2 inch long slivers
  • strawberries, cut into quarters lengthwise
  • wasabi mayo
  • crema balsamic sauce

Stretch out the anchovy fillet - silver skin side facing up.
Drizzle with wasabi (4 dots).
Place the avo and strawberry wedges together at a right angle (90°) to the fillet, and roll / wrap with the anchovy fillet.
Tie with a blanched chive ribbon (or skewer with toothpick) and dot with wasabi mayo.
Drizzle with crema balsamic and serve.
