Ingredients (10)

450.00 g tomatoes
45.00 ml sunflower oil
2.00 garlic — cloves, crushed
1.00 ml fresh chillies
15.00 ml sugar — to taste
salt and freshly ground black pepper — to taste
1.00 ml oregano
750.00 g baby marrows
450.00 g onion
450.00 g potatoes

Method:

Skin and chop tomatoes. Heat oil in a deep frying pan and add garlic and chilli. Cook until softened.
Add chopped tomatoes and sugar and simmer until reduced to a coarse sauce. Season with salt, pepper and origanum.
Meanwhile slice baby marrows, onions and potatoes 5 mm thick and fry in heated oil on both sides until golden. Return all vegetables to a frying pan and add just enough sauce to coat lightly when shaken.
Put vegetables in 1 large or 6 individual ovenproof dishes and top with remaining sauce.
Bake at 180 ºC for 30 minutes. If desired, brown top under a preheated grill for a few minutes before serving.
