    baby marrows

Method

 
Skin and chop tomatoes. Heat oil in a deep frying pan and add garlic and chilli. Cook until softened. Add chopped tomatoes and sugar and simmer until reduced to a coarse sauce. Season with salt, pepper and origanum. Meanwhile slice baby marrows, onions and potatoes 5 mm thick and fry in heated oil on both sides until golden. Return all vegetables to a frying pan and add just enough sauce to coat lightly when shaken. Put vegetables in 1 large or 6 individual ovenproof dishes and top with remaining sauce. Bake at 180 ºC for 30 minutes. If desired, brown top under a preheated grill for a few minutes before serving. TOTAL KILOJOULE COUNT: 5 215 kJ (1 245 Cal). A portion: 870 kJ (210 Cal).
