American apple cake

    sugar

    extra-large eggs
  • 400
    ml
    cake flour
  • 5
    ml
    baking powder
  • 200
    ml
    cream
  • 1
    grated rind of a lemon
  • Filling

    apples
  • 65
    ml
    sugar
  • 10
    ml
    cinnamon
 

Method

1 hour
 
Preheat the oven to 180 ºC (350 ºF).
Spray a 24 cm loose-bottomed cake tin with non-stick spray.
Cream the butter and sugar until pale and fluffy.
Add the eggs one by one, beating well after each addition.
Sift in the cake flour and baking powder and fold in with the cream and lemon rind.
Turn into the prepared tin and arrange the apple slices on top.
Sprinkle with the sugar and cinnamon and bake for an hour or until a testing skewer comes out clean when inserted into the centre of the cake.
Cool and remove from the tin. Serve with cream if desired.
