Almond yellow rice

    water
  • 250
    ml
    uncooked long-grain rice
  • 2
    sticks cinnamon
  • 4
    cardamom seeds
  • 3
    ml
    turmeric
  • 5
    ml
    salt
  • 50
    g
    blanched almonds
  • 15
    ml
    sugar
  • 45
    ml
    butter or margarine
 

Method

 
Bring water to the boil. Add rice, cinnamon, cardamom seeds, turmeric and salt. Cook, uncovered, until fairly soft (approximately 20 minutes). Drain in colander and rinse with cold water. Return to saucepan with almonds and sugar, and dot with butter. Steam, covered, over medium heat for 10 minutes. For yellow rice, add 90 ml (1/3 cup) raisins or sultanas instead of almonds.
