Ingredients (9)

250.00 g almonds — ground
250.00 g icing sugar
50.00 g cocoa powder
1.00 ml cinnamon — ground
1.00 ml mixed spice — ground
10.00 ml vanilla — essence
30.00 ml cherry liqueur
2.00 eggs — large, whites only
50.00 g sugar

Method:

Place almonds in a bowl, and sieve in icing sugar, cocoa and spices.
Stir in vanilla and Kirsch.
Beat egg whites until stiff, then fold into almond mixture to make a firm dough.
Wrap dough in plastic wrap and refrigerate for one hour.
Spread the sugar on a clean work surface and roll out the dough on the sugar until it is about 1 cm thick.
Cut out star shapes.
If you are going to hang the stars on the tree, use a straw to punch out a hole in each one, through which to thread ribbon.
Place stars on a greased and lined baking tray and set aside for four hours.
Bake in a preheated 200 °C oven for six to eight minutes (they should still be a little soft inside).
Set aside until cool.
Once cool, brush with a little water and sprinkle with a little extra sugar.
