Almond shortcrust pastry

    g
    cake flour
  • pinch of salt
  • 25
    g
    ground almonds
  • 175
    g
    butter
  • 75
    g
    icing sugar
  • 1
    lemon, grated rind
  • 45
    ml
    milk
  • 1
    egg yolk
 

Method

 
1. Sift flour and salt into mixing bowl; add ground almonds. Cut butter into small pieces and rub in with fingertips. Sift in icing sugar and lemon rind. 2. Mix milk and egg yolk with a fork. Add to dry ingredients, using a butter knife to mix to a dough. 3. Turn out onto a floured work surface and knead to remove cracks. Cover the dough with plastic wrap and allow it to relax in the fridge for at least 30 minutes before using.
