Almond scones

    ml
    cake flour
  • 15
    ml
    baking powder
  • 5
    ml
    salt
  • 65
    ml
    butter or margarine
  • 40
    ml
    sugar
  • 200
    ml
    golden sultanas
  • 30
    g
    flaked almonds
  • 1
    extra-large egg
  • 50
    ml
    milk
 

Method

15 minutes
 
Preheat the oven to 220 ºC and spray baking sheet with non-stick spray or butter lightly.
Sift the dry ingredients together and rub in the butter.
Add the sugar, sultanas and half the almonds.
Beat the egg and milk together and gradually add to the dry ingredients.
Cut in with a knife until just blended and lightly gather the dough into a ball.
Roll out on a floured surface until about 2 cm thick and cut out scones with a scone cutter.
Brush the tops of the scones with a little beaten egg and milk mixture and sprinkle with the remaining almond flakes.
Bake for about 15 minutes until done and pale brown. Cool slightly and serve lukewarm with butter and jam.
