Ingredients (12)

65.00 ml raisins — seedless
45.00 ml brandy
2.00 ml almond essence
3.00 apples
2.00 pears — firm
10.00 ml almond oil — or sunflower oil
50.00 g almonds — slivered
30.00 ml butter
45.00 ml sugar — dark brown
2.00 ml allspice
60.00 ml orange juice — fresh
1.00 lemon — juice only

Method:

Soak raisins in brandy and almond essence. Core apples and pears and slice thickly.
Heat wok, add almond oil and heat. Add nuts and toast until golden. Remove.
Add butter to remaining almond oil and melt. Stir in sugar and spices. Cook to melt sugar.
Add apple and pear slices and cook gently, tossing from time to time. Add citrus juices, bring to a rapid boil and cook until just tender.
Serve immediately, sprinkled with almonds.
