    brandy

    almond essence

    firm pears

    almond or sunflower oil

    slivered almonds

    butter
  • 45
    ml
    dark brown sugar

    ml
    allspice
  • 60
    ml
    fresh orange juice
  • 1
    small lemon, juice
 

Method

 
Soak raisins in brandy and almond essence. Core apples and pears and slice thickly. Heat wok, add almond oil and heat. Add nuts and toast until golden. Remove. Add butter to remaining almond oil and melt. Stir in sugar and spices. Cook to melt sugar. Add apple and pear slices and cook gently, tossing from time to time. Add citrus juices, bring to a rapid boil and cook until just tender. Serve immediately, sprinkled with almonds. TOTAL KILOJOULE COUNT: 6 480 kJ (1 550 Cal). A portion: 1 295 kJ (310 Cal).
