Ingredients (7)

2.00 eggs — just the yolks
60.00 g castor sugar
280.00 g mascarpone cheese
90.00 ml cream
100.00 g almonds — ground
15.00 ml amaretto liqueur
250.00 g mixed berries

Method:

Cream egg yolks with sugar. Add mascarpone and beat until light and creamy.
Add cream, whip at high speed until thickened, then fold in nuts. Add liqueur, if using.
Spoon almond cream into 4 glasses. Chill.
Serve with rinsed berries.
