Almond cream with berries

    egg yolks

    castor sugar
  • 280
    g
    mascarpone cheese
  • 90
    ml
    cream
  • 100
    g
    ground almonds
  • 15
    ml
    amaretto liqueur (optional)
  • 250
    g
    berries of your choice
 

Method

 
Cream egg yolks with sugar. Add mascarpone and beat until light and creamy. Add cream, whip at high speed until thickened, then fold in nuts. Add liqueur, if using. Spoon almond cream into 4 glasses. Chill. Serve with rinsed berries.
