Almond cookie love

Ingredients (11)

250 g margarine — or butter
630 ml sugar
2 eggs
5 ml almonds — or vanilla essence
4 cup flour
5 ml Baking powder
2 ml Bicarbonate of soda
salt — just a pinch
Fondant:
2 cup icing sugar
1/2 cup water
2 Tbs glucose syrup — corn syrup

Method:

Pre-heat the oven to 180ºC.

Mix the margarine / butter with sugar. Add eggs, essence, salt.

Mix flour, baking powder and bicarbonate of soda. Mix well to form a medium thick dough.

Roll out the dough between two sheets of cling wrap, approximately 8mm thick.

Use a cookie cutter to cut out your desired shapes.

Place the cookie cutouts onto a greased oven tray and bake for 10-15 minutes, or until light golden brown.

Allow the cookies to cool completely before pasting the fondant shape/flower on top.

Fondant:

Mix together all of the ingredients, except the water.

Add the water in little quantities at a time, until you feel you have a thick dough-like mixture. Knead the fondant dough until smooth.

Roll out the fondant and use a cookie cutter to cut into shapes.

For a little extra detail – You can add edible pearls or gold to your cut-out.

Take a little drop of glucose syrup to paste the fondant cut-out and any edible extras onto the cookie.
