Pre-heat the oven to 180ºC.
Mix the margarine / butter with sugar. Add eggs, essence, salt.
Mix flour, baking powder and bicarbonate of soda. Mix well to form a medium thick dough.
Roll out the dough between two sheets of cling wrap, approximately 8mm thick.
Use a cookie cutter to cut out your desired shapes.
Place the cookie cutouts onto a greased oven tray and bake for 10-15 minutes, or until light golden brown.
Allow the cookies to cool completely before pasting the fondant shape/flower on top.Fondant:
Mix together all of the ingredients, except the water.
Add the water in little quantities at a time, until you feel you have a thick dough-like mixture. Knead the fondant dough until smooth.
Roll out the fondant and use a cookie cutter to cut into shapes.
For a little extra detail - You can add edible pearls or gold to your cut-out.
