Ingredients (8)

250.00 g butter — softened
180.00 g brown sugar — soft
2.00 eggs — large, beaten
280.00 g flour — self-raising
150.00 g glacé cherries — halved
75.00 g almonds — flaked
25.00 ml milk

Method:

Preheat the oven to 190 ºC (375 ºF). Grease a couple of baking sheets.
Cream the butter and sugar together.
Add the eggs gradually and beat well.
Sift the self-raising flour and fold into the sugar mixture, alternating with half the glacé cherries and almond flakes.
Add the milk and mix to form a slightly softer dough.
Drop spoonfuls of the dough on the baking sheet, allowing room for them to spread. Flatten slightly with the back of a spoon.
Sprinkle with the remaining almond flakes and place half a cherry on each one.
Bake for 8 to 12 minutes or until golden brown.
Allow to cool slightly on the baking sheets before transferring to a wire rack to cool completely.
Store in an airtight container.
