Almond and sesame brittle

Ingredients

    g
    butter
  • 300
    g
    sugar
  • 125
    ml
    syrup
  • 250
    ml
    water
  • 100
    g
    cashew nuts
  • 2
    ml
    bicarbonate of soda
  • 15
    ml
    sesame seeds
 

Method

10-15 minutes
 
Melt butter in a saucepan.
Add sugar, syrup and water and stir over medium heat until sugar dissolves.
Leave to boil without stirring until mixture reaches hard-ball stage (mixture should be hard and brittle when a little is dropped into a glass of cold water).
Add the nuts, bicarbonate of soda and sesame seeds. Mix well.
Pour into a greased shallow tin. Allow to cool slightly before marking off squares.
When cool, break into marked squares.
