Almond and raisin couscous

    ml
    olive oil
  • 250
    g
    couscous
  • 50
    g
    seedless raisins
  • 5
    ml
    salt
  • 500
    ml
    boiling water
  • 25
    g
    flaked almonds, toasted
  • 45
    ml
    finely chopped parsley
 

Method

15 mins
 
Place first five ingredients in casserole dish.  Stir well to dissolve salt.  Cover, microwave 100% (High) power, 4 to 5 minutes.

Leave to stand, covered, 5 minutes.

Add almonds and parsley, fluff up with fork.

Serve as a vegetarian main meal with salad, or as an accompaniment to chicken, meat or fish.

HINT: 

Dry toast almond in a hot dry pan. Keep watching and shaking them ! Remove from pan when lightly browned and use immediately. Or use the microwave.Pllace 5g butter or margarine in a bowl, melt in microwave oven.  Add almonds, stir to coat with butter, microwave on 100% (High) power, 2 to 3 minutes, or until toasted. Stir twice during cooking. Spread out on absorbent kitchen paper to drain and cool.
