    honey or golden syrup

    ground almonds

    soft brown sugar

    crushed Weetbix (4 bars)

    coconut
  • 500
    ml
    oats
  • 500
    ml
    cake flour
  • 2
    ml
    salt
  • 10
    ml
    bicarbonate of soda
  • 25
    ml
    milk
  • 2
    extra-large eggs (whisked)
 

Method

20-25 min
 
Preheat the oven to 180 °C and spray two baking sheets with non-stick spray or butter lightly.
Heat the butter and honey until the butter has melted. Set aside to cool.
Mix the almonds, sugar, Weetbix, coconut, oats, cake flour and salt together.
Dissolve the bicarbonate of soda in the milk and stir into the butter mixture.
Beat in the eggs and mix with the dry ingredients.
Mix well and press the mixture into the prepared baking sheets.
Bake for 20-25 minutes until golden brown.
Cool for 5 minutes, cut into squares and leave to cool completely on the baking sheets.
Store in an airtight container.
