Ingredients (18)

45.00 ml oil
750.00 g pork — rack
1.00 onion — chopped
500.00 ml stock — chicken
5.00 ml coriander — ground
5.00 ml cumin — ground
10.00 ml paprika
0.00 salt and freshly ground black pepper
45.00 ml chilli sauce
1.00 aubergine — diced
125.00 ml peanut butter
4.00 carrot — sliced
150.00 g green beans — halved
Futari
250.00 g pumpkin — diced
250.00 g sweet potatoes
1.00 onion — sliced
250.00 ml coconut milk
5.00 ml cinnamon — ground

Method:

Heat oil and brown ribs, then remove and keep warm.
Add onions and fry until soft, then add chicken stock, coriander, cumin, paprika, salt, pepper and chilli sauce.
Add peanut butter and brinjal, and cook for 1 minute.
Return ribs to sauce and cook for 45 minutes until ribs are tender.
Cook carrots and beans separately.
Cook all ingredients for futari in coconut milk.
Serve vegetables as accompaniment to pork ribs.
