4.00 bread — sliced wholewheat
20.00 ml butter
15.00 ml butter
5.00 ml sunflower oil
4.00 tomatoes — medium
8.00 black mushrooms — large
0.00 sea salt
0.00 freshly ground black pepper
10.00 ml mustard — powder
8.00 fresh basil
60.00 ml cream — fresh

Method:

Spread toast with first quantity of butter.
Heat second quantity of butter and oil in a frying pan.
Add tomatoes, and prick with a fork to release juices.
Sprinkle with sea salt, black pepper, mustard powder and basil leaves and cook until softened and juices mingle with butter. Stir cream in lightly.
To serve, pile tomatoes and their juices onto buttered toast and place on piping hot plates.
