A fishy affair

  • 6
    white fish fillets (kingklip, hake, steenbras or kabeljou will do)
  • 2
    lemons, juice
  • olive oil
  • salt and milled pepper
  • Topping
  • 65
    ml
    olive oil
  • 2
    cloves
    garlic
  • 2
    lemons
  • 20
    sun-dried black olives
  • 1
    bunch spring onions
  • pinch sugar
  • salt and milled pepper
 

Method

 
Wipe fish with a damp cloth and place on a baking tray.
Drizzle with lemon juice and olive oil and season with salt and pepper.
Preheat grill and cook fish for about 6 minutes or until just cooked through.
Meanwhile heat olive oil and sauté garlic for a few seconds.
Add remaining ingredients and cook for about 4 minutes.
Serve piled on top of fish with baby potatoes and salad or green beans.
