A fancy Niçoise tart

    ready-made puff pastry

    ripe tomatoes, quartered
  • 200

    green beans, blanched
  • 12
    olives
  • 2
    free-range eggs, boiled
  • 12
    capers
  • 6
    anchovy fillets, chopped
  • 1
    bunch
    a handful of fresh basil leaves
  • 100

    parmesan cheese, shaved
  • 20
    ml
    extra-virgin olive oil, to drizzle
  • 20
    ml
    red-wine vinegar, to drizzle
  • 5
    pinch
    salt
  • 5
    pinch
    freshly ground black pepper
 

Method

Preheat the oven to 200°C. Roll out the pastry and place it on a baking tray. Bake for 30 minutes or until pastry is puffed up and golden brown. Leave to cool. Top with the salad ingredients. Drizzle olive oil and vinegar over the salad and season.
