Ingredients (13)

400.00 g puff pastry
2.00 tomatoes — quartered
200.00 g green beans — blanched
12.00 olives
2.00 eggs — boiled
12.00 capers
6.00 anchovy fillets — chopped
1.00 bunch fresh basil — handful
100.00 g parmesan cheese — shaved
20.00 ml olive oil — extra virgin, to drizzle
20.00 ml red wine vinegar
5.00 pinch salt
5.00 pinch black pepper — freshly ground

Method:

Preheat the oven to 200°C. Roll out the pastry and place it on a baking tray. Bake for 30 minutes or until pastry is puffed up and golden brown. Leave to cool.
Top with the salad ingredients. Drizzle olive oil and vinegar over the salad and season.
