Cheesy baked mushrooms

Ingredients (8)

20 ml olive oil
2 garlic — cloves, crushed
1 tomato and onion mix
1 green pepper — small, finely chopped
sea salt and freshly ground black pepper
30 ml chutney
12 brown mushrooms — (stems removed), wiped clean with paper towels
100 ml mature cheddar cheese — grated

Method:

Perfect for meat-free Mondays or for those who want something lighter after a weekend of indulgence.

Natalee Hallgren of Tecoma, near East London, says this dish is a hit when her family have friends over for a braai.

Preheat the oven to 180 °c. Line a baking sheet with foil or baking paper.

Heat the olive oil in a pan and fry the garlic for 1 minute.

Add the tomato and onion mix and green pepper and simmer until thick and fragrant.

Season with salt and pepper and add the chutney.

Put the mushrooms on the prepared baking sheet. Spoon the sauce over the mushrooms and bake them for 15 minutes.

Scatter the cheese on top and bake for another 5 minutes or until the cheese melts.
