Sweet potato rostis and Russians

  • Eskort Russians
  • 250
    g
    Beauregard sweet potatoes (orange flesh)
  • 250
    g
    regular sweet potatoes
  • 1
    tsp
    minced garlic
  • 2
    Tbs
    butter
  • 1
    can chopped tomatoes
  • 1
    tsp
    paprika
  • 1
    tsp
    chilli flakes (optional)
  • 1
    avocado
 

Method

Peel and grate the sweet potatoes.

Form rostis in the palms of your hands – about 6cm in diameter.

Fry the rostis in a pan with the butter until golden on either side and cooked through and set aside.

Chop the Russians and fry lightly in a pan before adding the spices and chopped tomatoes. Fry for a further 5 – 10 minutes.

Serve the spicy Russians on top of the rostis along with some chopped avo.
