Peel and grate the sweet potatoes.Form rostis in the palms of your hands – about 6cm in diameter.
Fry the rostis in a pan with the butter until golden on either side and cooked through and set aside.Chop the Russians and fry lightly in a pan before adding the spices and chopped tomatoes.
