Gourmet braai mushrooms

Ingredients

  • 200
    g
    Eskort Pork Fillet (or you can use 2 Eskort Pork Sosaties)
  • 8
    large brown mushrooms
  • 1/2
    cup
    chopped cherry tomatoes
  • 8
    slices of mozzarella
  • Sundried tomato pesto (or you can use hummus, mustard or basil pesto instead)
  • 1
    tsp
    of dried thyme (basil, oregano or parsley or a green herb mix can work here too)

Spread the sundried tomato pesto or sauce of your choice over the inside mushroom caps.

Break apart the mozzarella slices and lay over the pesto so you are mostly covering the mushrooms.

In a pan (or on the braai) cook your fillet or sosaties. Spice these depending on which you decide to use –some salt and pepper and rosemary will work well!

Chop up the pork into small pieces and spread evenly over the mushrooms.

Add the chopped cherry tomatoes and thyme.

Braai straight on the grill, or wrapped in foil, for about 20 minutes.
