Ingredients (8)

1 bacon — Eskort Streaky, chopped, fried
3 eggs
1/2 cup milk
80 g cherry tomatoes
1 cup spinach — chopped
puff pastry — frozen, ready rolled
1 tsp nutmeg — ground
1 red onion — diced

Method:

Preheat the oven to 180°.

Cover a pie dish with the puff pastry.

Spread out the spinach, onion and cherry tomatoes evenly over the puff pastry.

Beat the 3 eggs together with the milk, add the bacon and pour the mixture into the pie dish.

Bake for 50 – 60 minutes.
