Scrumptious bacon and egg toasties

Ingredients

  • 1
    ciabatta (or other farm-style bread)
  • 500
    ml
    grated cheese
  • 2
    eggs, beaten
  • 1/2
    onion, finely chopped
  • 20
    ml
    mustard powder
  • 250
    g
    streaky bacon, cooked
 

Method

Slice the bread and arrange it on a baking tray. Toast both sides under a preheated grill until crispy.

Mix the cheese, eggs, onion and mustard powder together, season with salt and pepper, and divide the mixture between the slices.

Top each one with a strip of bacon and put them back in the oven until golden brown. They’re delicious with fresh salad as a quick meal or snack.
