Pork banger wraps with fruity relish

  • 4
    flour tortillas
  • 4
    pork bangers
  • rocket, to serve
  • tomato, sliced, to serve
  • RELISH:
  • 125
    ml
    dried cranberries, chopped
  • 60
    ml
    crimson raisins, chopped
  • 1
    small apple, peeled, cored and chopped
  • 75
    ml
    sugar
  • 1
    ml
    ground nutmeg

Relish Mix together the ingredients for the relish along with 150ml water in a microwave-safe bowl. Microwave on high for 30 minutes, stirring every 10 minutes. Cool, then place in the refrigerator to chill.

While making the relish, cook the pork bangers under a medium-hot grill for 20 to 25 minutes, turning often. Remove from the oven and set aside.

Place the tortillas under a hot grill for about 30 seconds. Place rocket, sliced tomato and a pork banger onto each tortilla and spoon the relish over. Roll up and serve immediately.
