Warm bean salad

    onions, finely chopped
  • ½
    each red and yellow peppers, diced

    green beans, steamed and ends chopped
  • 2
    tomatoes, finely chopped
  • 125
    ml
    white wine vinegar
  • 80
    ml
    sugar
  • 5
    ml
    mild curry powder

    baked beans in tomato sauce
  • 410

    red kidney beans, drained
  • 15

    corn flour
  • 10
    ml
    water
  • salt and black pepper

Need a delicious side to with your braai? Try this warm bean salad.

1 Mix onions, peppers, green beans, tomatoes, vinegar, sugar and curry powder in a large microwave-safe bowl.

2 Microwave the mixture on maximum power for 10 minutes until softened. Stir at least twice while cooking.

3 Remove from the oven and add the baked beans with sauce and red kidney beans. Mix the corn flour with the water to form a thick paste and stir into the bean mixture. Season to taste with salt and pepper. Microwave again for 2 minutes, uncovered, until the mixture has thickened.

4 Serve hot as a side dish with braaied meat or any dish of your choice.
