Ostrich salad

    ml
    olive oil
  • 3
    carrots, cubed
  • 1
    sprig
    rosemary
  • 200
    g
    ostrich fillet
  • 2
    apples, sliced
  • 30
    g
    walnuts, chopped
  • handful salad leaves, chopped
  • 5
    ml
    Dijon mustard
  • 10
    ml
    apple cider vinegar
  • 10
    ml
    extra virgin olive oil
 

Method

Ostrich meat is lean and tastes similar to beef. Just be careful not to overcook it.

1 Heat the oil in a pan over medium-high heat, add the carrots and cook stirring for 5 minutes.

2 Push the carrots to one side and add the rosemary, ostrich and apples. Cook, turning the meat, for 5 minutes.

3 Transfer the meat to a cutting board and slice. Add the walnuts and mix through.

4 DRESSING Mix all the ingredients together until incorporated.

5 Spread the salad leaves on a serving plate, add the carrot mixture and drizzle with dressing. Enjoy!
