Burrata salad with crispy Italian sausage and orange

Ingredients (8)

100 g buratta ball
100 g salsiccia
3 orange — segments
5 g pumpkin seeds
1 pinch coriander — seeds
orange — zest only
fresh parsley
olive oil — extra virgin

Method:

• remove buratta from fridge an hour before serving
• crisp the salciccia in a pan with a touch of olive oil and season
• place the cheese on a plate for serving and top with the hot sausage and oil
• arrange the segments, and pumpkin seeds and dust with salt, coriander seed, parsley and black pepper
• finish with fresh orange zest
