Ingredients

  • 2
    cup
    samp, soaked overnight
  • Salt to taste
  • Knob of butter
  • 2
    Tbs
    oil
  • 1
    large onion, chopped
  • 3
    tomatoes, peeled and chopped
  • Salt and freshly ground black pepper to taste
  • 1/2
    cup
    grated cheddar cheese
 

Method

Drain the samp and cover with fresh water. Bring to the boil, lower the heat and simmer until cooked. Add salt at the end of the cooking.

Drain and add a knob of butter. Keep warm.

Heat the oil in a heavy bottomed pan and fry the onion until soft and translucent.

Add the tomato and cook for about 10 minutes until a nice thick sauce has formed, Season with salt and pepper and stir into the samp.

Add the cheese (if using) and stir through.

MOVE HINT: You can also add 2 Tbs of finely chopped onions if you want.
