Method

Pre-heat the oven to 180°C. Grease a 26cm x 8cm loaf tin with non-stick cooking spray. Line the base with additional baking paper.

Heat a pan over medium heat and add the oil, onion and garlic. Fry for 2 minutes. Stir in the borrie, masala, tomato paste, salt and beef mince. Fry for 10 minutes. Stir in the raisons, chutney and cream cheese. Once al the cream cheese has melted stir in the breadcrumbs.

Whisk the eggs and milk together and add a pinch of salt. Stir half of this mixture into the minced beef mixture. Spoon the mixture into the prepared tin and flatten out the top.

Pour the remaining egg mixture over the meat and arrange the bay leaves on top.

Bake for 30 minutes. Allow to cool in the tin for 5 minutes before carefully turning it out onto a serving platter.

For the salsa, stir everything together and season with salt and pepper. Serve it on the side.

Tip:

The meatloaf can be eaten warm or at room temperature. When sliced, it makes a wonderful sandwich filling and also works great in lunchboxes.
