Grilled mielies with a super herby butter

  • 2-3
    red chillies, finely chopped (remove the seeds for less heat)
  • 250
    g
    butter at room temperature
  • 5
    ml
    ground cumin
  • handful
    fresh coriander leaves, chopped
  • 8
    fresh mielies, husked
  • salt and freshly ground black pepper, to taste
 

Method

Prepare the butter:
Mix all the ingredients, apart from the mielies and salt and pepper, until creamy. Place in a serving dish and leave to one side.

Cook all the mielies for approximately 8 minutes in water and drain. Grill them over medium coals or under a preheated grill until cooked and black specks start appearing on the kernels.

Flavour with salt and freshly ground black pepper and serve with the flavoured butter.
