Chilled cucumber, pea and yogurt soup

Ingredients

  • one cucumber, skin peeled off, roughly chopped
  • 2
    cup
    peas, I used frozen
  • handful
    fresh herbs – mint and basil
  • Black pepper to season
  • 1
    cup
    full cream yogurt
  • onion sprouts to garnish
  • crusty bread to serve
 

Method

 

In a processor - add the cucumber, peas, herbs, seasoning and yogurt. Blend until smooth.

Pour in your favourite glasses, top with sprouts and serve with crusty bread.
