Lemony tuna pasta salad

Ingredients (10)

400 g farfalle pasta
2 tuna — tinned, drained and flaked
200 g asparagus — blanched, sliced diagonally
125 ml fresh mint — finely chopped
125 ml fresh parsley — finely chopped
salt and freshly ground black pepper — to taste
DRESSING:
lemon — zest and juice
30 ml fresh chillies
1 garlic — clove, crushed
125 ml breadcrumbs — toasted

Method:

Boil the pasta in salted water according to the directions on the package. Drain.

Beat the dressing ingredients together and stir through the pasta. Add the tuna, asparagus and herbs and stir through. Sprinkle the toasted breadcrumbs on top just before serving.
