Quick and easy fold-over omelette

This makes a tasty, protein rich breakfast.

  • 4
    large eggs
  • 2
    large courgettes - grated
  • 1
    coconut oil
  • 1
    disc feta cheese
  • 1
    salt and pepper
Servings: Change Serving



Heat a nonstick pan with the coconut oil. Once it reaches medium to high heat, saute the courgettes until soft and tender - about 3 - 5 minutes.

Meanwhile whisk together the eggs in a mixing bowl.

Turn down the heat slightly and add the eggs to the pan. Allow to them to cover the base of the pan and get in between the small pieces of grated courgettes. Season lightly with salt and a hint of pepper.  Wait for the eggs to coagulate around the edges and underneath.

Top with the pieces of feta cheese and place under the grill for 1 - 2 minutes. Remove and using a wide spatula, fold the omelette over.

Serve while still hot.
