Ingredients (17)

2 kg leg of pork — rind scored
MARINADE
2 onions — large, chopped
10 garlic — cloves, crushed
3-4 chillies — chopped
45 ml lemon juice
500 ml water
125 ml fish sauce
125 ml soy sauce
160 g castor sugar
45 ml sesame oil
400 ml coconut milk large handful of fresh coriander
to cook
salt — for rubbing
oil — for brushing
to serve — to serve
apples — green, sliced
ginger — preserved or pickled

Method:

1. Prick the pork all over.

2. Marinade Mix all the ingredients except the coconut milk
and coriander in a saucepan and simmer for 
15 minutes. Add the coconut milk and coriander.

3. Cool and pour over the meat. Marinate overnight  or for at least 1 hour.

4. To cook Remove the meat from the marinade and put on a
rack placed over a roasting pan. Pour a little boiling water into the roasting
pan.

5. Rub the rind well with salt and bake the leg at 160 °C for
25-30 minutes per 500 g plus 25 minutes extra. Brush occasionally with the
marinade and oil. Cover the leg with aluminium foil if it browns too quickly
and replenish the water in the roasting pan as needed. Put the leg under the
grill for the last 5-10 minutes of cooking time to crisp the rind.

6. Bring the leftover marinade to the boil and cook well.
Pour over the meat and bring to room temperature.

7. To serve Mix the apple slices and preserved ginger. Carve
the leg of pork and serve with the apple and salads.
