Chilli chicken pasta

    spaghetti

    olive oil
  • 1
    onion, chopped
  • 1
    chilli, chopped
  • 2
    garlic cloves, crushed
  • 3
    chicken breast fillets, sliced
  • 5

    ground cumin
  • 10
    ml
    smoked or regular paprika
  • 1
    red or green pepper, diced
  • 250
    ml
    sour cream
  • salt and freshly ground pepper
  • 1
    red chilli, chopped
  • 10

    fresh coriander
 

Method

1. Boil the spaghetti until al dente. Drain, but retain 125 ml  (½ c) of the cooking liquid for the sauce.

2. Heat the oil in a saucepan and fry  the onion, garlic and chilli until fragrant. Add the chicken, cumin, and paprika and stir-fry until  the chicken is done.

3. Add the diced  pepper, sour cream and  remaining  cooking liquid and mix well. Add the spaghetti to the sauce mixture and heat. Season with salt and freshly ground pepper.

4. Let the spaghetti stand for 10 minutes to allow the sauce  to be absorbed. Sprinkle the extra chilli and coriander over and serve.
