Beat the eggs in a bowl. Season with salt and freshly ground black pepper.Heat a little oil in a large frying pan. Add the eggs and swirl around the pan. Pull the mixture away from the sides, using a spatula to allow the runny egg to spread to the edges.Once the top is nearly set, sprinkle with the topping ingredients, ending with the cheese.
