Ingredients (10)

4 chicken breast fillets
olive oil — extra virgin, for drizzling
himalayan salt
black pepper — freshly ground
180 g green beans — French variety, trimmed, blanched
walnuts — chopped
150 g radicchio
35 g blue cheese — crumbled
1/3 cup yoghurt — Greek
lemon — juice only

Method:

For the chicken
Preheat the grill. Place chicken breasts on a roasting tray, drizzle with olive oil, season and grill until browned and cooked through.

For the dressing
Place all the ingredients for the dressing in a blender and blitz until smooth.
