Argentinian steak roulade

Ingredients (17)

minute steaks
freshly ground black pepper
125 ml wine — red
30 ml lemon juice
30 ml Worcestershire sauce
15 ml honey
60 ml fresh chillies — 573
bay leaves
garlic — large cloves, crushed
15 ml oil
onion — chopped
100 g spinach
60 ml breadcrumbs
eggs
60 ml olives
red pepper — julienned
60 ml BBQ sauce

Method:

1 Make a fire, ensuring there are enough coals for braaiing.

2 Keep toothpicks or meat string handy.

3 Season the steaks on both sides with freshly ground pepper.

4 Mix the rest of the ingredients in a marinade bowl and add the steaks. Marinate for 1-2 hours in the fridge.

STUFFING

1 Heat the oil in a pan and fry the onions until tender. Add the spinach and stir-fry until wilted.

2 Remove from the pan and allow to cool.

3 Mix the spinach with the breadcrumbs, egg and olives.

4 Remove the steaks from the marinade and spread stuffing on each.

5 Put some red pepper strips on the top of each steak and roll the meat, fastening with a toothpick or meat string.

TO FINISH

1 Arrange the steak roulade on a braai griddle, brush with BBQ sauce and braai for 2-3 minutes a side or until cooked to your liking.

2 Carefully halve each roulade and serve.
