Warm Bar-One and chocolate fondants

Ingredients (14)

FONDANTS:
120 g castor sugar
150 g eggs
95 g chocolate — chips
60 g butter — unsalted
30 g nestlé bar-one sauce
40 g flour — plain
BALSAMIC FOREST FRUIT:
125 g berries — frozen
25 g castor sugar
1/2 cinnamon — stick
1/2 vanilla — pod
10 g honey
2 Tbs vinegar — balsamic
100 g wine — red
20 g cornflour — maizena

Method:

Fondants:

Preheat the oven to 180°C and butter 4 moulds.

Melt the chocolate, butter and Nestle Bar-One sauce in a bowl over warm water stirring all the time and set aside once melted together.
Now beat the eggs and the sugar in a bowl over warm water, until you get a good firm foam.
Remove from heat and allow to cool by whisking.
Add the warm chocolate mix and fill the moulds ¾ ways full. Bake for 8-10 minutes – this should give you a soft liquid centre.

Balsamic forest fruit:

Simply place all ingredients except the fruit, red wine and corn flour into a pot and bring to the boil.
Mix the red wine and corn flour together, remove liquid from heat and stir in the wine mixture.
Return to the heat, stirring to achieve a syrup. Now add the berries and warm through.
