For the shortbread:
Sieve the flour. Mix in the fat and sugar with the flour. Combine all the ingredients to a smooth paste. Roll carefully on to a floured surface ½ cm thick.
Place on a lightly greased baking sheet, bake in a moderate oven for approximately 15-20 minutes. Before it becomes too cool, cut out rings.For the spiced apple cake:
Put the lemon juice and zest in a stainless steel pan along with the apple pieces and cook gently with a lid on until the apple is soft. Allow to cool.
Fry the breadcrumbs in the butter and 1Tbs of Nestle Bar-One sauce, not too fast. Remove from the heat, add the spices and sugar, allow to cool on a plate. Make sure it is all mixed well.
Place shortbread rounds in the bottom of a ring tin. Layer with apple sauce and then the crumb mix; repeat again so you finish with a level crumb topping. Allow to set and then turn out of the ring and serve with a warm compote and Bar-One ice cream.For the Bar-One ice cream:
Whisk the egg yolks and sugar until pale.
Boil the milk and Bar-One sauce
, add to the egg mixture, return to the pan and cook until it coats the back of a spoon.
Remove from the heat and pour into a bowl, add the cream straight away to stop it cooking on.
