Peri-peri chicken and chorizo burgers

These Portuguese-style chicken burgers will satisify anyone who likes food spicy!

Ingredients (9)

4 chicken breast fillets
1/2 cup wine — rosé
3 garlic — cloves, crushed
2 green chilli — chopped
2 bay leaves
1 butter
100 g chorizo sausage — thinly sliced
350 g tomatoes — mixed
4 bread — Portuguese rolls, toasted

Method:

Place chicken breasts in a shallow dish, pour over wine, add garlic, chilli and bay leaves. Season well, cover and allow to stand for 30 minutes.

Heat a pan until hot, add butter and oil, allow to melt. Add chorizo; cook until crispy and brown. Remove and set aside. Add chicken breasts to pan, reserving marinade. Cook for 5 min on each side or until cooked through; add the marinade and tomatoes, bring to a boil, then simmer for two minutes.

Place chicken breasts on rolls, top with chorizo, spoon over marinade and tomatoes. Serve with chips.
