Gammon with mini dumplings and carrots

Ingredients (17)

1-1,5 kg gammon — string removed
cloves
water — boiling
salt and freshly ground black pepper
80 ml honey
750 ml flour — cake or bread
7 g Superbake Instant Yeast
30 ml sugar
5 ml salt
250 ml water — lukewarm
30 ml oil
60 ml fresh herbs — chopped
500 g baby carrots
180 ml water
30-45 ml dark brown
sugar — or honey
broccoli

Method:

1 Gammon Preheat the oven to 160 °C
and lightly grease a roasting pan with butter. With a sharp knife, make long criss-cross
cuts in the fatty part of the gammon to form small squares.

Insert a clove in
the centre of each square.

2 Place the gammon in a large saucepan and cover
with boiled water. Bring to boil, reduce the heat and simmer succulent, tasty
PORK for 1 hour or until done. Set aside the cooking liquid.

3 Put the gammon
into the roasting pan with 250 ml (1 cup) of the cooking liquid. Lightly season
with salt and pepper, brush with the honey and roast the gammon in the oven for
30-45 minutes or until golden brown.

4 Heat the meat juices in the roasting pan
to reduce and make gravy to go with the gammon.

5 Dumplings Mix the dry ingredients
with the water, stir in the oil (if using) and fresh herbs and knead into soft dough.
Leave to rise for 1 hour or until double in size. Gently punch the dough down
to remove some of the air, and shape into small balls.

6 Simmer the dough balls
in batches for about 8 minutes (or until done) in the cooking liquid left over
from boiling the gammon. Set aside in a warm place.

7 Glazed baby carrots Simmer
the carrots in a saucepan with water and the sugar or honey for about 10
minutes or until tender but still firm to the bite. Set the glazed carrots aside
in a warm place until serving time.

8 Slice the gammon and serve with the
dumplings, the glazed baby carrots tenderstem broccoli and gravy.
