Easy Christmas cupcakes

    fresh cream

    caster sugar

    chocolate, melted
 

Method

10-15 mins
 

1 Preheat the oven to 180 °C. Place cupcake liners in a muffin pan.

2 Muffins Sift the cake flour, baking powder and salt into a bowl and set aside.

3 Put the eggs in a large mixing bowl and beat with an electric beater or hand whisk until light and frothy. Add a third of the caster sugar at a time and beat until well mixed. Continue beating until all the sugar dissolves.

4 Add the melted butter, vanilla essence and milk in a steady stream while beating. Add the sifted ingredients and fold into the mixture until well combined.

5 Fill the cupcake liners to a third with batter. Bake for 12-15 minutes or until done. Cool completely.

6 Topping Beat the cream and castor sugar with an electric beater or hand whisk. Put in a piping bag and decorate the cupcakes. Add a dollop of melted chocolate in the centre.
