Crushed cornflake chicken strips

  • 4
    free-range chicken breasts
  • 2
  • 1/4
    melted butter
  • sea salt flakes and freshly ground pepper
  • SERVE:
  • steamed broccoli
  • tomato sauce (optional)


Preheat the oven to 200°C.

Finely crush the cornflakes on a wooden board by rolling with a rolling pin. Cut each chicken breast into about three strips.

Firmly press one side of each strip into the cornflakes and place on a baking sheet lined with baking paper, crumbed side up.

Season the chicken strips and drizzle each one with a teaspoon of melted butter.

Bake for 10 minutes or until cooked through, and serve with broccoli, and tomato sauce for dipping.
